I’ve never really found good, authentic Mexican food in New York. Honestly, I even have a hard time finding it in Mexico (though, granted, I tend to go to the more touristy areas of the country).
Most of the Mexican food I’ve had in the city are the…cheesy, sombrero and chili decorated holes in the wall that make decent guacamole but that’s about it. The rice is bland, the beans are pretty obviously from a can. They lack refinement. And when I say refinement, I don’t mean that of a…3 or 4 star restaurant helmed by a classically trained french chef. I mean…refinement of flavor. The right amount of acidity to the right amount of spice. The right amount of saltiness to the right amount of sweetness. Mostly, the Mexican food at all of the places I’ve been in the city is just…muddled.
Until I found Maya.
